Let's Make Cookies!

Christmas is just around the corner and if you're like me, the baking has already begun. I got the pumpkin breads, applesauce loaves, peanut butter/chocolate chip cookies made and the caramel popcorn for gifting, but it's just not Christmas without a traditional batch of iced sugar cookies! Since that is on my agenda for today, I thought I'd share this delicious recipe I found and a yummy simple icing that doesn't require corn syrup or meringue powder. I will be using all natural, organic ingredients and a whisk and hand mixer, but if you have a stand mixer, by all means, spare your hands. As always, tweak and adjust my recipes to your liking. With that said, let's throw on our aprons and get to it...


🎄 Sugar Cookies


Ingredients

  • 5 1/2 cups flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup of butter (2 sticks at room temp)
  • 1 3/4 cups cane sugar
  • 1 cup sour cream
  • 2 tsp vanilla extract

Instructions

  1. Whisk dry ingredients together - flour, baking powder, baking soda, salt. Set aside.
  2. Beat butter until smooth.
  3. Add sugar. Mix until fluffy.
  4. Mix in eggs one at a time.
  5. Blend in sour cream.
  6. Add vanilla extract - mix.
  7. Mix in dry ingredients a little at a time. When combined, it will be sticky.
  8. Split dough into 2 parts. Place on parchment paper, spead out a bit and wrap completely.
  9. Place in refrigerator for a couple hours.
  10. Preheat oven to 350 degrees.
  11. Remove dough from fridge and on a floured surface, work dough until malleable.
  12. With roller, spread out dough to desired thickness.
  13. Cut out shapes and place on parchment lined cookie sheet.
  14. Bake for 8-9 minutes.
  15. Allow to cool completely.
  16. Once cooled, they are ready for icing.

🥣 Simple Icing


Ingredients

  • 2 egg whites
  • 3 cups powdered sugar
  • 2 tsp vanilla extract (or) 1 tsp almond extract (or) 1 tsp lemon juice.

Instructions

  1. Mix egg whites in bowl until frothy.
  2. Add powdered sugar - mix.
  3. Add vanilla extract. Mix until cohesive and shiny (about 3-5 minutes with hand mixer).
  4. Use icing as is, or divide into portions for coloring.
  5. Decorate cookies. Allow to dry for 24 hours before stacking.
